Latin Name: Apium graveolens var. rapaceum
Description: Monarch is a very large variety of Celeriac. On the inside, it has white, firm flesh. It keeps its white colour when it is cooked. It stores very well.

How To Grow Celeriac From Seed: Celeriac does best when started indoors in Spring. Using seedling modules or small pots, sow 2 seeds in each cell/pot. Only barely cover the seeds, as they need light to germinate. Germination can take up to 3 weeks. Keep the seeds damp throughout.
When the seedlings establish, thin to leave only the strongest one in each cell/pot. Harden off the seedlings for 1 to 2 weeks when they are roughly 10cm tall. Transplant to their final spot when hard frost risk has passed.
Harvest from September onwards. Cut the roots from the plant after digging it up. Monarch is a very large variety of Celeriac.
